Love having this one at home submitted by PharmRach on August 12, 2020, 9:12pm I love the recipes in here! Maria Lichty has a wonderful blog, which is how I originally stumbled on her cooking. She herself is a vegetarian, which is why the book contains lovely recipes black bean-quinoa enchilada bake, sweet and spicy tofu with zucchini noodles, and crispy bean tostadas with smashed avocado and jicama-cilantro slaw (there are more but those 3 are my favorites). They have been invaluable to me as a “wannabe” vegetarian- I want to eat less meat but worry about making veggie dishes that are filling and satisfying- these dishes make me think I can do it. She does provide plenty of meat and fish dishes as well, and her specialty is cookies- she provides 12 different cookie recipes- I haven’t made them all, but they are to die for!
