A thoroughly interesting intro to food preservation submitted by LibraryMaven on June 15, 2014, 3:10pm Preserving By the Pint is my new favorite can't-stop-raving-about-it cookbook. McClellan succeeds in making jams, pickles, relishes, and other preserved foods unintimidating for the beginner, while her emphasis on seasonality and small batches (often just 3 or 4 half-pint) leads to quantities of preserves that one person or a small family can manage to eat. Those who have some experience in food preservation will find this cookbook of value as well, as McClennan takes tried-and-true recipes (strawberry jam) and gives them new twists (honey sweetened strawberry jam, anyone?) as well as introduces readers to brand new preserves (tomato paprika jam.) I cannot wait to cook my way through the year with this book.
