An updated classic submitted by rdb78 on June 21, 2013, 9:40am This is an updated classic from the 70's, now with color illustrations. It's detailed how-to of basic kitchen techniques, which will expand your abilities beyond just reproducing recipes. An essential volume.

Jacques Pepin was personal chef for 3 French Presidents including Charles DeGaulle, as well as JFK. His memoir is also excellent.

A new classic submitted by seadocks on July 20, 2013, 7:32pm I checked this out from the library and then I went and bought it. This book is great because it has tons of pictures to guide you through what it is teaching you. This will get good use by me and my kids. This book is a must have because it helps you understand the techniques that you should have before you start wondering why recipes you make from cookbooks dont turn out, which in my case was because my version of a dice, or a saute, was not a real version and was having the wrong influence on my food. This book will help you become a better cook by helping you understand the basics. Another great item to check out with this is the learning companies dvd lectures on food by the CIA instructor. The one that is four dvds is great, great intro to cooking put the two together and in less than a year you will be amazed at how much better you can cook.
