In my top three submitted by camelsamba on August 23, 2023, 10:58pm This is in my top three vegetable cookbooks (along with Madhur Jeffrey’s World Vegetarian and From Asparagus to Zucchini); in fact, my copy at home is starting to fall apart! The book is organized by vegetable or category of vegetables (eg winter squash). It covers some less common vegetables, such as cardoon, salsify, and yuca. For each one, he provides a standard overview (including availability, selection, storage, etc) along with the recipes. The recipes range from simple presentations to more complex meldings of flavors. Although they can’t all be winners, I’ve enjoyed most of the recipes I’ve tried.
