Classic vegetarian cookbook - lots of yummy food!

This book is a classic of vegetarian cooking. It starts with information about the world food supply and why it's a good idea to eat vegetarian -- and then there are dozens of awesome recipes!!! I've used my poor tattered copy so much and for so long that the binding broke in two. Some favorite recipes from this book are: Lentils Monastery Style (those monks ate well!); Spinach Lasagna Special -- no tomato sauce, but lots of mushroomy spinachey goodness; Fried Spiced Tofu -- a curried tofu recipe that goes with everything and could well convert a tofu-hater into a tofu-lover; and lots more. This cookbook is a real trove of varied, down-to-earth recipes that taste good and are straightforward to prepare.
One note: This book was written years ago, when it was thought that you had to combine foods in order to get enough protein in each meal. It is now known that the body stores the building blocks of protein, so you don't need to combine them in each meal.
