Detailed explanation of how cakes work submitted by S_H on August 28, 2022, 6:49pm Rose Levy Beranbaum has spent a large amount of time studying cakes, even going so far as to complete a masters dissertation on whether sifting affects the quality of a yellow cake. In other words, this woman has gone extremely in depth into cakes. This book will not give you recipes for unusual, no sugar, keto, or solely vegan cakes. It will give you tried and true recipes for cakes that a) use all egg yolks, b) use all egg whites, c) have no cholesterol and low saturated fat, d) have low cholesterol and saturated fat, e) are better made ahead, f) are suitable for Passover, or e) are quick to mix, and it will give you an explanation for the chemistry behind why each of the various recipes works along the way. If you want to know why your recipe works, rather than just follow your recipe, this book is for you.
It's all true submitted by tuttlium on July 27, 2023, 7:38am I checked this book out after reading the other review here, and it's just as good as promised. I particularly enjoy her voice and the many stories about how the recipes came to be.
