I have yet to make a something from this book that isn't amazing! I highly recommend the Rosemary-Roasted Tofu Cubes - very simple and easy to prepare with a wonderful texture (which can be sometimes hard to achieve with tofu). Cajun-Creole-Spiced Tempeh Pieces with Creamy Grits is one of the best meals I've ever had. I also recommend Open-Faced BBQ Tempeh Sandwich with Carrot -Cayenne Coleslaw and Wild Style Salad (Rock the Bells Remix). Some of the recipes do require a lot of time, but I think they are worth the effort.
