Interesting and Relevant

Although a few years out of date by now, I think this is still a relevant text. While it is a bit long and can feel dense at parts, Quammen does an incredible job breaking down the complicated nature of zoonotic diseases into something more easily understood - something which is incredibly important, especially given recent events (e.g. the ebola epidemic and the zika outbreak in 2016).
Quammen also has two other, more recent, texts about Ebola and HIV/AIDS - those texts are shorter (being updated excerpts from this book), and if you're intimated by the size of this text but interested in the subject matter, you might start there and then read this.
