I recommend this book not only as a vegan, but also as a gluten-free and food-allergy sufferer. Although some of the recipes do include common allergens, they can easily be substituted or left out. The book also occasionally makes suggestions for replacing hard-to-find ingredients, as well as explains any uncommon methods used. Some favorites include Sunshine Spinach Salad, Confetti Rice Salad, and Forbidden Rice Bibimbap. (One strange thing I noticed is that one of the recipes calls for an egg, which is not vegan. I'm guessing that was an editorial error.)
